So – installing OOo 3.0 on an Ubuntu AMD64 may not be as trivial as it seems.
In order to get it running, I had to go through a “couple” of steps:

Remove the previous installation of OOo:
> sudo apt-get remove open-office.org-core

Download OOo 3.0 from here and choose the Linux DEB version
